Why the Original Drain Pan Went Back In

The remaining scope on this cooler is the drain system — a new heated drain pan and drain assembly. That work depends on a replacement drain hub that had not yet arrived. Rather than leave the case out of service or run it without a functioning condensate path, our technician reinstalled the original heated drain pan as an interim measure so the cooler could return to normal operation immediately.

A return visit will be scheduled once the drain hub arrives, at which point the new heated drain pan and drain assembly get permanently installed. Sequencing a repair this way keeps the operator selling product while the parts pipeline catches up, and it avoids the far more expensive alternative: a case sitting dark on the sales floor for a week.

Why Bakery Display Cases Are Hard on Controls and Drains

Front-of-house bakery cases run continuously, in a warm room, with the glass absorbing ambient heat all day and the doors opening constantly during business hours. Two components take most of that abuse:
