A later call at an East Austin bar put us on the other side of the fryer equation: a Pitco SE14-S electric unit rather than a gas-fired one. The complaint pointed at heat, and the cause was a defective high-limit safety switch — the component that cuts power when oil temperature climbs past a safe ceiling.
